Vegan patties tend to always fall into cliches. Mushrooms which tastes like meat, soy for the protein. Which is not always bad, I do that sometimes too. But this time I want to go crazy with an easy patty for your next burger, that is also oh-so colorful that one can’t really resist. So here it goes.
Ingredients:
1 cup red lentils, soaked in water for at least 4 hours
1 small-medium beetroot, finely grated
1 medium onion, finely chopped and sauteed
1 tablespoon oats, powdered in a coffee or spice grinder
1 tablespoon tahini
salt, pepper, cumin
So the process goes quite simple. Blend the lentils into a mash and mix well with everything else. Oil your hands and create the patties. Place on a baking form covered in baking paper and bake for 15-20 minutes in 200 degrees.
As for the sauce on top: here you can go as wild as one might get, but if you wonder what I’m suggesting (and did on the picture): mix soy yogurt with lemon zest, salt, chopped mint and a tiny bit of minced garlic.
