Do you know this feeling, when you get up in the morning after a long night of drinking and too much whiskey in your stomach? The best cure is a lot of liquids, a lazy day at home and a fatty, comforting meal. Here I will take care of the last part.
Don’t let the name fool you, the minced tofu is not so wet as in an original sloppy sandwich, and I tried, while preserving the “junkey” feeling, to keep it rather healthy.
Ingredients for the sloppy tofu (4-5 slices):
200g smoked tofu
2 tablespoons dark Korean soy sauce
1 teaspoon black Indian salt (kala namak)
1 tablespoon tahini
1 onion
a bit of oil for frying
some sriracha sauce, as much as you can bare
For the toasts:
4 slices of some good bread
dried tomato paste
1 tomato
1 small onion
2 gherkins
Start with assembling the bread slices. Spread the dried tomatoes (if you want to do that yourself, like I did: 200g dried tomatoes soaked in hot water and sieved, 1/4 cup olive oil and 1 clove of garlic, blended until smooth), cover with thin slices of tomato and onion, and the diced gherkins. Place in a baking pan and place in the oven. 200 degrees, for 5 minutes.
While the bread is toasted, make the tofu. In a pan, heat some oil and thin slices of onion. While it turn golden, crumble the tofu with your hands into the pan. After frying for 2 minutes, add the soy sauce and paprika, and mix. While it glazed together, add the sriracha, tahini and kala namak and take off the flame.
Carefully place the tofu mix on the toasts, and send to the oven for another minute. Eat with care and enjoy your lazy day.
If there were a restaurant that sold these, I would have been there Sunday morning!
